Almost everybody likes pasta. But pasta, unfortunately, is not so much part of what I eat, because it is (1) made from wheat or other grains, and (2) very carb-loaded.
Moreover, I love carrots! (There was a time in my life when I ate so many carrots every day that I turned orange – no joke!) And I was tired of just cutting them into pieces every time I had them. 
So this is how I made up carrot tagliatelle! They are very easy to make, and a perfect substitute for pasta because you can twine them delightfully around a fork!
CARROT TAGLIATELLE WITH CINNAMON AND CHIVES
Ingredients
- butter or oil
- 3 carrots, peeled
- salt to taste
- pepper to taste
- 1 tsp cinnamon
- 1 handful of fresh chives, chopped
Directions
Cut carrots into tagliatelle using a vegetable peeler.
Heat fat in a pan and roast the carrots for a few minutes while constantly stirring until they become soft. Season with salt, pepper, and cinnamon. If you want them crispy, go on stir frying them openly. If you want them rather soft, add a little water, then put the lid on and cook for a few minutes until the water is gone. Serve with fresh chives and enjoy.
You can use these carrot tagliatelle as a basis for a variety of stir fry dishes, or just make them as a delightful side dish. Practically, you can season them as you like – with fresh ginger, garlic, basil, oregano, tarragon … They all work very well!





that happened to me too, i ate carrots every day and even drank carrot juice and my skin turned yellowish!
i can imagine zucchini tagliatelle works well with pesto
i+ve done the same thing but with zucchini, works beautifully too. that wat you can change color of the dishes according to taste
I’ve also thought about zucchini tagliatelle, but I haven’t made them so far. I believe they are a perfect substitute for pasta in Italian dishes. Pesto sounds good, and I think also a simple tomato or bolognese sauce would work very well!
